1Cup Rice (Whitemulti-grain, instant, minute rice, brown rice)
1can Mixed Vegetables
1tablespooncooking spray or oil
Salt & Pepper
Cook rice per direction on box or bag. Remove from heat and let cool for 5-10 minutes
Heat a separate skillet with cooking spray or oil (1 tablespoon). Open can of Mixed Vegetables or preference of can vegetables and drain. Allow to cook for 45 seconds then stir. Continue to stir every 45 seconds for 5-7 minutes until they begin to golden.
Add cooked rice to skillet with vegetables. Add eggs to the rice, mix for approximately 2-3 minutes until eggs are completely cooked and mixed well with rice and vegetables. Add pinch of black pepper and salt.
Optional: protein: chicken, shrimp, soy sauce (1 tablespoon), a dash of garlic powder, and/or Sesame oil for additional flavor.
