Mini Turkey Meatloaf

Okay, quick. Think of the classic “comfort food”. Is it meatloaf? Of course it is, because nothing is more conforting than a big slab of meat, seated next to a pile of fluffy white carbs all covered with gravy. Alas, meatloaf is not without its flaws. Its time consuming for one, and it, sadly, isn’t exactly the healthiest meal either. 

So, let’s give meatloaf the Jim Cooks Food Good treatment (half the time and calories, all of the flavor); may I present Mini Turkey Meatloaf:

  1. Preheat oven to 400 deg F. Dice onion and mince garlic. In a large saucepan over low heat, sweat with a heavy pinch of salt and pepper, 6-7 minutes. As the veggies sweat, chop parsley.
  2. Add onion and garlic to very large bowl. Fold in turkey, egg, breadcrumbs, 1/3 cup ketchup, and parsley. Loosely mix to combine, and spoon into greased muffin tins (you’ll yield around 12 loaves). Bake for ~15 minutes.
  3. In separate bowl, combine hot sauce, Worchestershire Sauce, and remainder of ketchup. After the 15 minutes, glaze tops of loaves. Bake for another 10-15 minutes, or until an internal temperature of 165 deg F. Serve along side a roasted veggie (like the shown Brussels Sprouts).
