Roasted Pork Chops

I feel sometimes pork chops get overlooked. They are lean, tasty, and cook up quick, plus they are a canvas for whatever flavors you prefer. This version is as easy and hands off as it gets, with the bonus that it uses pantry ingredients you probably already have. Lets go.

Roasted Pork Chops

Ingredients

  • 4 boneless pork chops
  • 3 tablespoons dijon mustard
  • 3 tablespoons white wine vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons capers
  • 2 tablespoons honey
  • 1 tablespoon paprika
  • 1 teaspoon dried parsley

Instructions

  • Preheat oven to 425 degrees. Season chops with salt, pepper, and paprika and place into large (non stick sprayed/oiled) baking dish.
  • Bake for 12-14 minutes or until internal temperature is 145 deg F. Once done, remove chops from pan and deglaze pan with garlic and vinegar. Whisk in honey, parsley, dijon, and capers until a light sauce forms. Serve over the chops, best with a side of roasted vegetables.
