In a bowl, mix the melted butter, minced garlic, chopped herbs, salt, and pepper.
Place the potatoes on a baking sheet and brush them generously with the herb-garlic butter mixture, ensuring the flavors get between the slices.
Bake for about 50-60 minutes until the edges are crispy, and the insides are tender. Baste the potatoes with the remaining butter mixture halfway through the cooking process.
Once done, remove the potatoes from the oven, sprinkle with additional fresh herbs if desired, and serve hot.
