Ingredients

  • 6 medium-sized russet potatoes
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 2-3 tablespoons fresh herbs rosemary, thyme, and/or parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly. Place a potato between two chopsticks or wooden spoons to act as a stopper to prevent cutting all the way through.
  • Carefully make thin, parallel cuts across each potato, ensuring not to slice all the way through, leaving the bottom intact.
  • In a bowl, mix the melted butter, minced garlic, chopped herbs, salt, and pepper.
  • Place the potatoes on a baking sheet and brush them generously with the herb-garlic butter mixture, ensuring the flavors get between the slices.
  • Bake for about 50-60 minutes until the edges are crispy, and the insides are tender. Baste the potatoes with the remaining butter mixture halfway through the cooking process.
  • Once done, remove the potatoes from the oven, sprinkle with additional fresh herbs if desired, and serve hot.
