Classic Rhubarb Crisp

Ingredients

  • 4 cups chopped rhubarb
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup brown sugar
  • 1/2 cup unsalted butter , melted
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, toss together the chopped rhubarb, sugar, flour, vanilla extract, and cinnamon until well combined.
  • Transfer the rhubarb mixture to a 9x13-inch baking dish.
  • In another bowl, whisk together the flour, rolled oats, brown sugar, melted butter, cinnamon, and salt until crumbly.
  • Sprinkle the topping over the rhubarb filling.
  • Bake the crisp for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
  • Remove from the oven and let cool for a few minutes before serving.
  • Serve warm with a scoop of vanilla ice cream, if desired.

Notes

Note: You can also customize the recipe by adding chopped strawberries or other fruits to the rhubarb filling, or by using nuts in the topping. Enjoy!
