Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, toss together the chopped rhubarb, sugar, flour, vanilla extract, and cinnamon until well combined.
Transfer the rhubarb mixture to a 9x13-inch baking dish.
In another bowl, whisk together the flour, rolled oats, brown sugar, melted butter, cinnamon, and salt until crumbly.
Sprinkle the topping over the rhubarb filling.
Bake the crisp for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
Remove from the oven and let cool for a few minutes before serving.
Serve warm with a scoop of vanilla ice cream, if desired.
Notes
Note: You can also customize the recipe by adding chopped strawberries or other fruits to the rhubarb filling, or by using nuts in the topping. Enjoy!
