Ingredients

  • 1 large mango , ripe and diced
  • 1 cup cherry tomatoes , halved
  • 1/2 cup red onion , finely chopped
  • 1/4 cup fresh cilantro , chopped
  • 1 jalapeño pepper , seeded and finely diced
  • 1 lime , juiced
  • 1/2 teaspoon salt (or to taste)
  • A pinch of black pepper

Instructions

  • In a mixing bowl, combine the diced mango, halved cherry tomatoes, chopped red onion, chopped cilantro, and finely diced jalapeño pepper.
  • Squeeze the juice of one lime over the mixture, ensuring all the ingredients are well-coated.
  • Season with salt and a pinch of black pepper. Taste and adjust the seasoning as desired.
  • Gently toss the ingredients together until everything is evenly distributed.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Give the Mango Pico de Gallo a final stir before serving to ensure the flavors are well-mixed.
  • Serve alongside your favorite Mexican dishes, such as tacos, quesadillas, or grilled chicken. Or enjoy it as a refreshing dip with tortilla chips!
