Pork Tonkatsu

Ingredients

Tonkatsu

  • 4 large boneless pork chops (thinly sliced)
  • 1/2 cup flour
  • 1/2 cup corn starch
  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 2 eggs
  • 1 tablespoon soy sauce
  • 2 cups panko breadcrumbs
  • 3 tablespoons olive oil
  • Toasted sesame seeds (for garnish)

Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons dijon mustard
  • 1 clove of garlic (minced)
  • 2 tablespoons brown sugar
  • 1 teaspoon worcestershire sauce

Slaw

  • 1 pound shredded red cabbage
  • 1 tablespoon soy sauce
  • 3 tablespoons rice wine or white wine vinegar
  • 2 tablespoons brown sugar

Instructions

  • Preheat oven or airfryer to 400 degrees.
  • In a bowl, whisk together sauce ingredients: soy sauce/mustard/garlic/brown sugar/worcestershire sauce. Set aside.
  • In another bowl, combine slaw ingredients: shredded red cabbage, soy sauce, vinegar, brown sugar. Also set aside.
  • In three dishes, combine in each:flour/cornstarch/teaspoon of salt/garlic powder
    eggs (beaten)/1 tablespons soy sauce
    Panko breadcrumbs
  • Pat pork chops dry. If pork chops are thicker than say 1/4", gently pound out to that thickness; evenness more important than overall thickness.
  • Bread into flour mixture, then eggs, then panko, pressing the breadcrumbs in.
  • Drizzle olive oil onto pork and air fry for 9-11 minutes or bake for 14-16 minutes* or until 145 deg F internally and delightfully golden brown.
  • Serve pork on top of slaw, drizzled with sauce and toasted sesame seeds.

Notes

*the thickness of your chops will make cooking times vary; the thicker the chop, the longer it may take
