Ingredients

  • 4 cups shredded purple cabbage
  • 1 large carrot , grated
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro or parsley (optional)
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 clove garlic , minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large mixing bowl, combine the shredded purple cabbage, grated carrot, sliced red onion, and optional fresh cilantro or parsley.
  • In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, honey or maple syrup, Dijon mustard, minced garlic, salt, and black pepper to make the zesty dressing.
  • Pour the zesty dressing over the cabbage mixture and toss until all the ingredients are well-coated.
  • Allow the slaw to marinate in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  • Before serving, sprinkle the toasted sunflower seeds over the slaw for an extra crunch and nutty goodness.
  • Serve the Purple Cabbage Slaw as a refreshing side dish or as a topping for sandwiches, tacos, or grilled meats. Enjoy the vibrant colors and zesty flavors!
