Ingredients

  • 1 sweet potato
  • 2 tablespoons olive oil
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat the oven to 425 degrees F. Wash the potatoes, then dry. Poke holes in the sweet potato ~10 times using a fork. Rub the potatoes with the oil, then sprinkle liberally with the salt. Place the potatoes on a baking sheet and cook until tender, 40 to 45 minutes.
