In a large bowl, combine the chickpeas, diced bell peppers, diced red onion, diced cucumber, halved cherry tomatoes, chopped parsley, and chopped mint.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss everything together until well combined. Serve immediately along side grilled fish or chicken.
