Chickpea Salad

Ingredients

  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 small red onion diced
  • 1 small cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1 cup bean sprouts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large bowl, combine the chickpeas, diced bell peppers, diced red onion, diced cucumber, halved cherry tomatoes, chopped parsley, and chopped mint.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss everything together until well combined. Serve immediately along side grilled fish or chicken.
