Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter , melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1 cup peeled , cored, and finely chopped apples (about 1 medium apple)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter , melted

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick cooking spray or line it with cupcake liners. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. In another bowl, whisk together the melted and cooled butter, eggs, vanilla extract, and apple cider. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the chopped apples.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full., Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a fritter comes out clean. The tops should be golden brown.
  • While the fritters are baking, mix the granulated sugar and ground cinnamon for the coating in a shallow bowl. Melt the 1/4 cup of unsalted butter in another bowl.
  • As soon as the fritters are cool enough to handle, remove them from the muffin tin. Dip each fritter into the melted butter, then roll it in the cinnamon sugar mixture until evenly coated. Allow the fritters to cool slightly on a wire rack, and enjoy them while they’re still warm.
