  • 2 medium-sized summer squash (yellow squash or zucchini)
  • 2 tablespoons olive oil
  • 2 cloves garlic , minced
  • Salt and pepper , to taste
  • Fresh herbs (such as basil, parsley, or thyme), for garnish (optional)

  • Prepare the squash: Trim the ends of the summer squash and slice them into uniform rounds, about 1/4 to 1/2 inch thick.
  • Sauté the squash: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and golden.
  • Cook the squash: Add the sliced summer squash to the skillet, spreading them out in a single layer. Season with salt and pepper to taste. Allow the squash to cook undisturbed for 3-4 minutes to develop a light golden brown color on one side. Then, flip the slices and cook for an additional 3-4 minutes until tender and lightly browned on both sides. Adjust the cooking time based on your desired level of doneness.
  • Garnish and serve: Remove the skillet from the heat. If desired, sprinkle the sautéed summer squash with fresh herbs, such as basil, parsley, or thyme, for added flavor and freshness. Serve the dish immediately as a delightful side dish alongside grilled meats, roasted chicken, or as a topping for pasta or rice.
