Ingredients

  • 2 medium-sized summer squash (yellow squash or zucchini)
  • 2 tablespoons olive oil
  • 2 cloves garlic , minced
  • Salt and pepper , to taste
  • Fresh herbs (such as basil, parsley, or thyme), for garnish (optional)

Instructions

  • Prepare the squash: Trim the ends of the summer squash and slice them into uniform rounds, about 1/4 to 1/2 inch thick.
  • Sauté the squash: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and golden.
  • Cook the squash: Add the sliced summer squash to the skillet, spreading them out in a single layer. Season with salt and pepper to taste. Allow the squash to cook undisturbed for 3-4 minutes to develop a light golden brown color on one side. Then, flip the slices and cook for an additional 3-4 minutes until tender and lightly browned on both sides. Adjust the cooking time based on your desired level of doneness.
