Sauteed Zucchini Recipe

  • 2 large zucchini
  • 2 tablespoons olive oil
  • 2 garlic cloves , minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon italian seasoning
  • 1/2 cup crumbled feta (optional)


  • Wash zucchini and trim off ends. Cut in half lengthwise, and slice into 1/3″ half moons.
  • Place a large sauté pan (12″) over medium heat. Add in oil, then zucchini in an even layer if possible. Cook for 2 minutes, then flip/stir zucchini. Cook for another minute, then add in garlic, salt, and italian seasoning. Cook for one additional minute, then remove from heat. Serve immediately, topped with the feta if using.
