- 1 lb elbow macaroni or cavatappi
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups sharp cheddar cheese grated
- 1 cup Gruyère cheese grated
- 1/2 cup Gouda cheese grated
- 1 tsp Dijon mustard
- 1/4 tsp cayenne pepper (optional)

- 1/2 cup panko breadcrumbs

- 1/4 cup Parmesan cheese grated
Instructions
- Preheat your oven to 375°F (190°C). As the oven heats, bring a large pot of salted water to a boil. Cook the pasta until just al dente (about 1-2 minutes less than the package directions). Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux. Slowly whisk in the milk and cream, making sure the mixture stays smooth. Continue cooking for about 5 minutes, stirring occasionally, until the mixture thickens.
- Remove the saucepan from the heat and whisk in the Dijon mustard, cayenne pepper, and cheeses (cheddar, Gruyère, and Gouda). Stir until the cheeses are fully melted and the sauce is smooth.
