Chocolate Chip Banana Bread with Coffee Glaze
Ingredients
Banana Bread
- 1/4 cup Vegetable oil
- 1 1/2 cups flour
- 1/2 cup brown sugar packed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 very ripe bananas
- 1 cup chocolate chips
- 2 tablespoons strong coffee
- 1/2 teaspoon Vanilla extract
Coffee Glaze
- 1 cup powdered sugar
- 1/4 cup strong coffee
Instructions
- Preheat oven to 350 degrees, and grease a standard loaf pan.
- In a large bowl, combine the flour, sugar, baking soda, and salt. In another bowl, combine the oil, bananas, coffee, vanilla, and eggs and whisk until smooth.* Fold in the chocolate chips and pour into your pan. Bake until a toothpick inserted in the center comes out clean, about 35-40 minutes. Cool the loaf in the pan for 10 minutes, then turn out and cool completely, right side up.
- After bread is out of the pan, make the glaze by combining the powdered sugar with the 1/4 cup of coffee. Place bread on a large plate (you'll see why in a second), poke a few holes in the top of the bread, and slowly pour on the glaze. Allow for 30 minute to set up, then slice and serve along with a cup of coffee!
